The 'Cuadra de San Diego' was established in 1994 by Almudena González de Chaves, the drive behind the project. Originaly, the idea consisted of setting up a small bar with the intention of showcasing the production of wines produced by the San Diego finca, a vineyard acknowledged and praised in local historical documents. The bar began with much deserved success, and mostly, as a result of the quality of its dishes and excellent wine. ... /

In 1998 Almudena's sister Isabel joined the restaurant and brought with her a diverse range of culinary expertise from Germany, and experiences from various catering jobs in Madrid and Barcelona. Isabel offered a new character to the restaurant's cuisine and also succeeded in introducing an added innovative touch.
