Dos Naifes - Corte Atlántico is born from a real territory, the ocean that surrounds the Canary Islands.  With a cuisine that is built by managing the Atlantic as a culture and as a contemporary memory. 100% sustainable product.

Dos Naifes is led by Jorge Peñate and Luis Martín at the Gran Meliá Palacio de Isora hotel, who present a gastronomic proposal that for several year now has aspired to occupy its own recognizable place. The chefs explore the Atlantic diet understood as a culinary philosophy in each menu and translate it from seasonality, salt, currents and exquisite technique.

At Dos Naifes, Peñate and Martín cook the Atlantic over low heat. The proposal is based on a repertoire of products that reveals a tangible and very recognizable marine pantry for the Canarians: fish and seafood, bivalves, salted fish, curing, seaweed, stocks, preserves, broths, cuts and maturations worked from contemporary haute cuisine with its own discourse. The result is an experience where texture, temperature, salinity and time become the main terms used in his language.
