Traditional recipe in Tenerife

The tomato along with the banana is one of the most popular crops on the Canary Islands and is well known throughout Europe for its great quality. However, its production in the Archipelago is relatively recent. The first person to plant tomatoes on the islands for export was a British person by the name of Mister Blisse. He came to Gran Canaria with the company Swaston, one of the companies involved in the construction of the new Port "De la Luz," in 1895.

Now that our famous tomatoes have spread throughout the Canarian farming sector, delicious desserts and jams are made from them using very simple recipes.
Preparation: First you have to scald (blanch) the tomatoes to be able to peel them well. Once clean of any skin and seeds they should be put in metal pan together with the rest of the ingredients: the sugar, the lemon juice and the vinegar. Place the pan on a medium flame and stir continuously, always in the same direction, until the mixture has the consistency of jam. Put it in the fridge, and later serve it at room temperature.

1 kg of ripe (but not over-ripe) tomatoes.
750 g of sugar
2 tablespoons of vinegar or white wine
4 tablespoons of lemon juice
