Preparation: The egg whites are beaten to form peaks. The cooked almonds are then chopped or cut in strips and half the egg whites are added. Sugar is also added slowly with some grated lemon peel (optional) while being well-stirred. Once well mixed the rest of the egg whites are added. Make small round discs by gently pressing on the mixture with the bottom of wet spoon, then, put them on oven-proof paper on oven trays. They should be baked at medium heat until done.
